Chocolate Cake

Choclate Cake Recipe:

Ingredients
1 cup white flour (maida)
4 tbsp unsalted Melted Butter
...1½ tbsp cocoa
½ tbsp Drinking chocolate
¾ tsp Baking Powder
½ tsp Soda- bi- Carbonate
½ tin Condensed Sweetened Milk
½ tsp Vanilla Essence
½ cup water

Directions
Take butter and condensed milk in a bowl and mix well.

Mix white flour, cocoa, drinking chocolate, Baking Powder and Soda- bi-Carbonate in a separate bowl.

In the condensed milk mixture, add above mix together with vanilla essence and mix well. Keep on adding water until the mixture is light and fluffy.

Grease the oven tray, pour the mixture on it and bake at 180 degrees centigrade for 20 minutes.

Cool before serving.

Paneer Bhurji


Ingredients
• 300 g paneer mashed
• 1 onion finely chopped
...• 1tomato finely chopped
• galic ginger paste

Heat 2 tb spn oil in a pan, put 1/2 spoon jeera. Fry the chopped onion till it turns pink.Add haldi, red chilli powder,salt and mashed paneer in it. Let the paneer properly cook till it turns lite brown and then add chopped tomatoes and cook for 2 mins. Serve hot with chapatis.

Dahi Papdi

Papdi Crisp 24
Yogurt, whisked 1 1/2 cups
Salt to taste
...Sugar 1 tablespoon
Potatoes, boiled and chopped 2 medium
Sprouted Green gram, blanched 1/2 cup
Red chilli-garlic chutney 1/4 cup
Green chutney 1/4 cup
Sweet tamarind chutney 1/4 cup
Roasted cumin powder 1 teaspoon
Chaat masala 1/2 teaspoon
Red chilli powder 1/2 teaspoon
Fresh coriander leaves 2 tablespoons
Sev as required
Pomegranate (anar), peeled 2 tablespoons


METHOD
Add salt and sugar to yogurt and whisk till smooth. Keep it in the refrigerator till use.
Arrange the papdis on a plate. Place some potatoes on each papdi.
Over that put some boiled sprouted moong.
Drizzle a little red chilli-garlic chutney, green chutney and sweet tamarind chutney. Sprinkle cumin powder, chaat masala, a little red chilli powder and salt.
Top it all up with chilled yogurt.
Drizzle some more of the sweet tamarind chutney, red chilli-garlic chutney, coriander leaves, sev and pomegranate pearls.
Serve immediately.

Pumpkin raita

Ingredients:
...
Pumpkin (Kaddu) - 1 cup
Salt (Namak in Hindi) - ½ tea spoon
Mustard (Raai Powder) - 1 tea spoon
Rock Salt - ½ tea spoon
Jeera Powder (Cumin) - 1 tea spoon
Curd (dahi) - 2 cups

Preparation
1.Initially you have to shred the Kaddu and then boil it on the low gas in ½ cup water.
2.Boil it on low gas till the water gets finished. Then remove it and keep it for cooking for some time.
3.Punch curd and mix the Cumin, Salt. Rock salt, Mustard, with the pumpkin paste.
4.Add the curd and mix it properly. Now it raita ready to serve.

Turnip fruit Halwa


Ingredients:
1 1/2: salgam (turnip fruit) big sized
4 tsp: Ghee (butter)
1 cup sugar
¼ tsp: cardamom powder
1 tsp: almonds
1 tsp: cashew
1 tsp: dry grapes

Recipe: Wash the salgam, peel it and grate it. Heat ghee/butter in a pan, add the turnip into it, cook it nicely, as it is cooked, add sugar. As the mixture thickens, add cashews, almonds, dry grapes and cardamon powder. Serve it hot.

Corn Bhel

INGREDIENTS

Corn niblets 1 cup
...Onion , chopped 1 large
Tomato, chopped 1 large
Potatoes, bolied, 1/2 inch cubes 2 medium
Chaat masala 1 teaspoon
Green chillies, chopped 3-4`
Green chutney 2 tablespoons
Sweet tamarind chutney 2 tablespoons
Fresh coriander leaves, chopped bunch1/4 medium
Lemon juice 11/2 teaspoons
Salt to taste
Sev for garnish

METHOD
Boil corn niblets. Drain and remove excess water. This bhel can be made with hot or cold corn nibletsIn bowl, mix corn niblets, onion, tomato, potatoes, chaat masala, green chillies, green chutney, tamarind chutney, coriander leaves well. Add lemon juice, salt and mix. Divide into individual servings, sprinkle sev and serve immediately.

Rajasthani Mirchi Bada


Ingredients:


...4 large Green Chillies
4 medium potatoes, boiled
2 medium Onions, finely chopped
2 teaspoon Red Chilli powder
1 teaspoon Coriander Powder
1 teaspoon Chaat Masala Powder
1/2 teaspoon Garam Masala Powder
1 cup Gram Flour
Oil for frying

Directions:
Slit green chillies and remove the seeds.
Peel and mash boiled potatoes and add onions, red chilli powder, garam masala powder, chaat masala, coriander powder and salt. Mash and mix well.
Divide this mixture into 4 equal portions.
Fill the stuffing mixture into the Chillies.. if you like you can also cover the chilies with this potato mixture.
Now prepare a thick batter using gram flour, red chilli powder, salt and water as required.
Keep the batter for about 10-15 minutes.
Heat oil in a deep frying pan/Kadhai to a moderate temperature. Dip stuffed green chilies into the gram flour batter and deep fry until golden brown.

Mix vegetable curry


Ingredients
½ cup French beans cooked
½ cup paneer small diced
1-cup cauliflower cut into small florets and blanched
...3 tbsp onion paste
1 tbsp ginger/garlic paste
¾ cup tomato puree
2-3 green chillies chop
1 tbsp coriander chop
2 tbsp curd
½ tsp turmeric, jeera pd., red chili pd., garam masala, coriander Pd. Each
1 tsp olive oil/ salt to taste
Method
Heat oil in a non-stick pan; add ginger/garlic paste sauté for 2-3 minutes, add onion paste and sauté for 5 minutes. Now add all spices, green chilli, tomato puree and curd and cook well until the gravy is thickened and cooked. (You can add some water if required). At last add all cooked vegetables and paneer, mix well to coat vegetables and serve hot garnished with coriander leaves.

Recipe for Malai Kofta :

For the Kofta:
• 4-5 medium potatoes
• 2 tbsp crumbled/grated paneer,
...• 2 tbsp khoya (Mava)
• 3 tsp cornflour
• 4-5 cashewnuts chopped
• 1 tbsp raisins
• 2-3 finely chopped green chillies
• 1/2 tsp sugar
• 1 tsp dhaniya powder
• 1 tsp cumin powder
• 1 tsp red-chilli powder
• Salt To Taste
• 3 tbsp cooking oil/ghee
• Oil for frying the koftas
• 1 tbsp roasted sooji

For the gravy:
• 2 onions chopped
• 3 flakes garlic
• 1 inch ginger
• 3 tomatoes,pureed
• 1 tsp red-chilli powder
• 1/2 tsp garam masala powder
• 1/2 tsp dhania powder
• 1/2 tsp cumin powder
• 2 tsp powdered poppy seeds
• 1/2 tsp sugar
• 1 tbsp ground peanuts/cashewnuts

How to make malai kofta :

• Boil the potatoes till tender.
• Peel, mash ,add salt to taste and add cornflour and keep aside ..
• Mix all the other ingredients for the kofta into a paste.
• Make rounds of the potato dough and place a little of the prepared mixture in the center of each round.
• Shape into stuffed rounds. Roll into roasted sooji n keep aside.
Deep fry each kofta till golden brown .
• *For the gravy blend together the onions, ginger, garlic and the poppy seeds and fry in 3 tbsp of oil till brown and the oil begins to seperate.
• Add the pureed tomatoes, sugar and the ground peanuts/cashewnuts.
• When the gravy comes to a boil take it from the flame , add the koftas(Add koftas only before serving).

Note :
You can also add some fresh malai.
Mix in some water if gravy thickens too much .
The koftas should be put in just before eating the dish .

Matthe Ke Alloo

Mathe ke Aaloo
1/2 kg aaloo,
ek katori khatta dahi ya 4/5 katori khatta matha.
Baki masale apne masaldan me se.

Aaloo ubalkar chilen,2 aaloo chod kar baki sab hath se tod le ya kat len,kadhi me tel garm kare hind,,zeera ,rai aur hari mirch se chonke.Aaloo thodi der bhune aur usme pisa dhna lal ,mirch aur thoda pani dal de.Jo 2 aaloo bachaye the unhe kis ke sabzi me dal de.Thodi der pakaye aur usme matha ya dahi se banaya matha dal de.Thodasa gud swad ke liye.Sabzi aanch par se utarne ke bad namak dale .Achchi tarah milaye aur parose.
Ingredients:
1/2 kg boiled potatoes (leaving 2 potatoes rest cut all into pieces)
1 cup: curd
Spices: Coriander Powder, turmeric Powder, Red Chilly powder, salt as per taste
2 green chillies (cut into pieces)
 Cummin seeds, asafoetida
oil to fry
Recipe: Heat oil in a pan, add cumin seeds, asafoetida, green chilllies, boiled potatoes, red chilies powder, turmeric powder, coriander powder, fry it for some time, add some water (1/2 cup), now add the mashed potatoes(remaining 2 potatoes), boil it for some time (approx 5 -7 mins) add curd and a pich of sugar/jaggery. After removing it from heat add salt as per taste. Decor with coriander leaves.
